Cambridge’s food scene is set for a shake-up this autumn, as fast-casual sushi brand The Sushi Co announces its new flagship restaurant in the city centre.
The brand has secured the iconic 1-2 Bridge Street site, formerly home to the much-loved Patisserie Valerie, after a highly competitive bidding process. The building, owned by Trinity College, occupies a prominent corner in the heart of historic Cambridge and will soon host one of The Sushi Co’s signature live sushi kitchens.
Raheel Choudhary, Co-Founder of The Sushi Co, confirmed the news:
We’re super excited to be coming to Cambridge. From the moment we first visited the site earlier this year, we knew this was the perfect location for a flagship store.
Choudhary praised the city’s “prestigious” appeal and strong student population, predicting Cambridge will become one of the company’s busiest outlets.
The Sushi Co’s expansion shows no signs of slowing. Alongside the Cambridge opening, restaurants are currently under construction in Tower Bridge, Brighton, and Basildon, with another secured in Walthamstow. Three additional locations in the South East are in final legal stages, with two more currently under negotiation.
Demand is growing for our fresh, made-to-order sushi – and we’re ready to meet it.
The Sushi Co operates on a franchise model, offering new investors competitive terms, a low entry fee, and full training. Franchisees benefit from site sourcing support, store fit-out, operational guidance, and a fully tested business model designed for strong returns.
“This is one of the fastest growing sectors in the fast-casual industry,” added Choudhary. “We’re now inviting new franchise partners to join our journey.”
For Cambridge foodies and sushi fans, the arrival of The Sushi Co promises fresh flavours and a dynamic dining experience in one of the city’s most iconic locations.
